# When 'No Internet' Really Means No Internet: Local Edition for Restaurants in Egypt

A cloud POS queues an order through a dropped signal for a few seconds. It doesn't run a restaurant where the connection itself can't be trusted at all. What actually changes when the system lives on the till itself.

## Key points

- A cloud POS's offline queue is built for a connection that comes back in seconds — cash orders keep working through a brief drop, but the app itself still needs the internet to load and to take card or wallet payments.
- That is a different problem from a branch where the connection is unreliable for long stretches, not just flaky for a moment.
- GoSufra's Local Edition is the same POS, kitchen display and waiter app running on one Windows PC in the restaurant, served to the other screens over the shop's own WiFi — there is no cloud step to wait for because there isn't one in that loop at all.
- It costs once, per branch, and it doesn't do online ordering or delivery, since those need a public address the machine on your counter doesn't have — that trade is worth naming honestly rather than glossing over.

A cloud POS that queues an order during a dropped connection is solving a real problem — but it’s a different problem from the one a branch has when the internet itself can’t be counted on for long stretches at a time, not just a flicker.

## What the cloud plan’s offline mode is actually for

A queued cash order on a cloud POS is a bet that the connection comes back soon: the app was already loaded, the menu was already synced, and only the write — the order itself — waits in line. That covers a mobile network stalling for a few seconds or a router rebooting mid-shift. It does not cover a branch that needs to load the app, sign in, or take a card or wallet payment while the connection is genuinely down, because those steps still need the cloud on the other end.

## A different design for a different problem

Local Edition is not the cloud POS with a longer queue. It’s the same dashboard, POS, kitchen display and waiter app, running on one Windows PC inside the restaurant instead of on a server somewhere else. That PC serves the other screens — a kitchen tablet, a waiter’s phone — over the shop’s own WiFi. There’s no cloud step anywhere in that loop to wait for, because there isn’t a cloud step in that loop at all. Unplug the router entirely and the till, the kitchen screen and the reports carry on exactly as before, because none of them were talking to the internet in the first place.

## What that trade actually costs

Being honest about what this doesn’t do matters more than what it does. Local Edition doesn’t handle online ordering or delivery — a restaurant’s own website and QR-menu ordering need a public address to be reachable from a customer’s phone outside the building, and a machine sitting on the restaurant’s own network doesn’t have one. It’s also one licence per branch, each an island on its own machine, rather than several branches managed together from one account. For a restaurant that lives and dies on delivery volume, this is the wrong tool.

## Who this is actually for

A single dine-in restaurant where the connection is the unreliable part — not the software, the actual line coming into the building — is the case Local Edition was built for. It’s bought once from a GoSufra account, activated with a licence tied to that machine, and kept for as long as the restaurant runs it, with no monthly bill and nothing that stops working because a payment didn’t go through. If the restaurant later needs delivery, a website, or to manage more than one branch together, the data can be exported and brought into a cloud account — buying local isn’t a decision that has to be undone by hand later.

## The honest way to decide

- If the connection drops for seconds at a time, occasionally, the cloud plan’s offline queue already covers that — Local Edition isn’t solving a problem that doesn’t exist yet.

- If the connection is unreliable for hours, or the branch has chosen not to depend on an ISP at all, that’s the actual case for Local Edition.

- If online ordering or managing several branches together matters now or soon, say so before buying — that’s what the cloud plan is for, not the local one.

The right question isn’t “does it work offline” — both do, in different senses. It’s which kind of offline the branch actually has.
