# Meal cost calculator with waste: know your real profit on every plate

How to calculate the true cost of a meal after waste and yield, with a worked example on a chicken wrap: why the cost in your head is seven points too low, and how GoSufra's recipe costing updates it by itself with every ingredient price.

Most owners know what a dish costs “roughly”. The trouble is that the rough figure is always **lower than the truth**, because it prices ingredients at what you paid, not at the amount that actually reaches the plate after trimming, cooking and spoilage. That gap is waste, and it is where many restaurants’ profit quietly disappears.

## The formula that matters: yield

**Yield** is the share of an ingredient that is still usable after preparation. A kilo of chicken breast, trimmed and grilled, might give only 700 g — a 70% yield.

> **True cost per kilo = purchase price per kilo ÷ yield**

If chicken costs $8 a kilo at 70% yield:
8 ÷ 0.70 = **$11.43** per usable kilo — 43% more than the figure on the invoice.

## A full example: a chicken wrap

With a selling price of $7.00 before tax:

- **Food cost % in your head:** 2.20 ÷ 7.00 = **31.4%**

- **True food cost %:** 2.71 ÷ 7.00 = **38.8%**

That is $0.51 per wrap. Sell 60 a day and:
0.51 × 60 × 30 = **over $900 a month** on a single item, invisible in every report because it was “eaten” by waste.

## So what do you do? Three options

To bring food cost back to around 32%:

1. **Adjust the price:** 2.71 ÷ 0.32 ≈ $8.50. The market may not accept that in one step — see [raising menu prices when costs rise](https://gosufra.com/en/blog/raising-menu-prices/).
2. **Improve the yield:** a supplier with better-trimmed breasts, knife training, or tighter cooking time and temperature. Every five points of yield changes the plate cost.
3. **Adjust the portion:** 150 g may become 130 g without the guest noticing, if the plate is balanced.

Usually the answer is a mix of all three. What matters is that you **decide on the true numbers**, not the rough ones.

## The three kinds of restaurant waste

### 1. Prep waste

Bones, skin, fat, peel and weight lost in cooking. This is expected waste, and it belongs **inside the recipe** as a yield percentage.

### 2. Spoilage and expiry

Ingredients past their date, stored badly, or prepared in excess and not sold. This is the waste that **must be logged** to be seen. Tracking stock by batch and expiry reduces it.

### 3. Food sent back

Plates returned from the floor, or orders made wrong. This tells you something about portion, quality or order accuracy.

After a week of sales, count the stock.
