From paper dockets to a kitchen display: what actually changes
How a kitchen display system works, how to split stations, set priorities and prep timers, and which metrics tell you the kitchen genuinely improved.
An order written on paper has a short and dangerous life: printed, clipped, splashed, dropped, misread, or forgotten under another. And when the customer complains forty minutes later, there is no record telling you where the minutes went.
A kitchen display system solves exactly that: it turns an order from a piece of paper that can be lost into a state you can track.
What the screen actually does
- Receives the ticket the moment it is rung up — at the till, from the table, or from a delivery order.
- Splits it across stations — grill, cold, fryer, drinks, desserts — so each station sees only its own items.
- Shows per-item status, not just per-order: one item ready, another still cooking.
- Runs a timer from the moment of receipt, so lateness becomes a visible number.
- Raises priority when needed: normal, rush, VIP.
- Keeps the record: who prepared it, when they started, when they finished.
Station design is the important decision
The common mistake is one big screen where everyone sees everything. The result is visual noise, with each cook hunting for their items in a list that mostly is not theirs.
Start with a simple split:

The pass station is what prevents the classic failure: a finished plate going cold while it waits on an item from another station. When the pass sees the whole order, it knows when everything can leave together.
Priorities
Three levels are enough:
- Normal — ordered by time received.
- Rush — a late ticket, a guest waiting in the room, or a driver standing by.
- VIP — a reservation or a key customer.
One rule matters: who may raise priority must be defined. When everyone can escalate, the word loses its meaning within a week.
Metrics worth watching

Measure for two weeks before any change. Without a baseline you will argue about impressions rather than numbers.
Connecting it to the rest of the operation
The screen alone is not the goal. Its value shows when it is part of a full path: the guest orders from the table by QR or from the app, the ticket reaches the kitchen directly, the waiter knows when the plate is ready, and the driver is assigned at the right moment rather than twenty minutes early.

An implementation week
- Day 1–2: Draw your stations on paper and map every menu item to one.
